Well, after being closed for over about a year and a half, the location that once housed Fajita’s Southwest Bar and Grill (located at 15265 Galaxie Ave W) will now reopen under a new name managed by those of the “Two Guys from Italy” fame.
It looks like the restaurant will open in late spring or early summer based on their application for a wine and 3.2 malt liquor license which will have a hearing on 3/22/07. It’s not unusual to ask for this after opening but I haven’t seen any changes at this location recently so I assume they are looking to be approved beforehand.
These are the same people that originally brought us the fairly awful Viva Italia Italian Food Restaurant in Eagan, MN which, from what I understand, is apparently under new management since Kim and I visited back in October of 2005.
So, we get to look forward to another chain (at least this time it’s local) in Apple Valley’s barely alive hell hole at 153rd and Legacy Park.

Right on. It’s hard to beat the consistently mediocre food of yet another chain. Why take the risk of eating something interesting when you can have suburban Italian.
