Last week’s poll asked about the quality of hospital care you or your family members have received. While I haven’t been all that impressed with how my family members were treated and certainly how I was treated while attempting to ensure they received a level of care which I found acceptable to warrant the $30,000+ in fees we were billed, it appears that most people either don’t know or think their care was excellent. Yay for everyone else. I suppose it gives me hope for what I really don’t ever want to have to do again.
This week’s poll comes after making bacon for breakfast on Saturday morning and for BLTs the other night. We’ve recently switched to baking bacon instead of frying it on the stove. We put a baking rack on a jellyroll pan and stick it in the oven at 420F for 25-30 minutes. The bacon grease is clear and easy to store for other purposes and the bacon isn’t as greasy. While it probably should cook more like 32+ mins to get to the point where most people like their bacon, I like mine a little undercooked and thus I’m pleased with the 25-30 minutes (depending on bacon thickness).
Even though we prefer baking it there are plenty of other options available for cooking bacon. One, grilling, is something I honestly never thought would ever work due to grease dripping on the flames but I wonder if anyone else here has tried it? Are there any other methods you have for cooking your bacon that you prefer? Do you do a bunch of different styles depending on the mood?

I’m not too much of a fan of frying bacon, and it doesn’t work very well doing it on a George Foreman grill, but I think that baking option looks real good. I’ll have to try that.

I had a Nueske’s BLT grilled on my gas grill yesterday (direct heat with the lid down, about 6 minutes per side). Keeping the lid down helps keeps the inevitable flames small and it singes the bacon just enough to crisp the edges while not overcooking the meat. Like you, I don’t want all of my bacon charred to a crisp, so it comes off a bit chewy and crispy. Yum.
Will be even better when the tomatoes come in this season.
On the subject of BLT sandwiches. I have been trying fun ways to change up the recipe like marinating the lettuce in balsamic and oil and using a spicy guacamole as the spread or making a simple sriracha aioli instead of just plain mayo.

I prefer mine the old-fashioned way. Fry it up and drain away the excess. Baking does sound ingenious though. Does it change the texture in anyway?

My wife and I have switched over to baking the bacon now for the past few years; we love it. If you do it right, you can get the bacon to the point of doneness where the fat on it just melts in your mouth when you eat it. So much better than frying IMO.

We have baked bacon for years, but we bake it directly on foil rather than a rack for two reasons; one, we don’t want to wash the rack, and two, we still want the bacon to fry and thus it needs to be down in its fat to do so.
We bake it at 375 for thicker bacon and 425 for thinner cuts.

I cook bacon that same way, love it. And as soon as the bacon is done, I bring the pan out to the deck, so it doesn’t stink up the house. Yum. Bacon.
