Kimmy and I tried out Fajita’s Southwest Bar and Grill which just opened near our house in Apple Valley… They are identical to Chipotle except they serve you at your table and they have a bar.
The place is new so the staff was slow, not very sure of themselves, and not very good at making the burritos as there was guac all over the outside of mine which made for some messy eating.
The bar side only seemed to have the typical domestics on tap which certainly won’t draw any major crowds but hopefully they will liven up the place a bit. It looks kinda boring over there.
In my opinion, the overall experience wasn’t a great one, but the place is new so what can you expect?

Fajita’s Southwest Grill was an excellent place to dine in, their food had a different taste to it that you are not able to find at other places. Sure you can find burritos at Chipotle and tacos at Taco Bell but it’s obviously all about the taste. People that have lived in the southern states and have eaten at a southwest restaurant would know that Fajita’s serves the same quality of food. Of course though some Minnesotans are so out of the loop and obese I mean obsessed with Americanized food that McDonalds, Burger King, Chipotle are all that they know. Obviously there are some people that are clueless and haven’t realized that Fajita’s is not a mexican restaurant rather then a Southwest restaurant (and yes there is a difference); hence the name Southwest and not mexican restaurant. If you want a restaurant that truely brings out the flavor and spicy side of the south then going to Fajita’s is definately the place, otherwise if you want the plain same old boring greasy food then stick to what you know.

I visited Fajita’s twice in the time that it was open as it’s now closed… I’m not sure who you think is “clueless” but if you believe that Fajita’s Southwest Grill’s buritos are not “Americanized” you’re insane. They were *identical* to those that are served at Chipotle and offered *no* variety in their menu.
It’s sad to see any local shop close up under pressure from those with large commercial backing but you cannot expect to compete when you’re selling identical meals “off the beaten path”. For you to claim that this was a true “Southwestern” restaurant and not a Chipotle/Qdoba knock-off is just plain wrong.
I have met, and talked at length with, the owner of Fajitas. He was truly interested in bettering the local business scene here in Apple Valley and he had grand visions of how his business would be integrated with Apple Valley’s vision of its “downtown”. It’s truly sad to see his business go.

This venue is now closed and has been replaced with Two Guys from Italy which is opening “soon”.

[...] In my review of La Luz (mentioned above) I posted that if they wanted to succeed, especially during their live music nights, they needed to serve something other than sandwiches and snacks. People are going to come to your venue but they aren’t going to spend much unless they are throwing down dollars aimed directly at your beer taps and liquor shelves. Even “wine bars” like what was available at Two Guys From Italy and Pardon My French probably aren’t enough and even with the serving of alcohol, you may end up closing up shop like Fajita’s Southwest Bar and Grill.
