One of Kim’s more famous co-workers, Jen, finally had her wedding on Saturday. It was a long and crazy process that ended up wonderfully. As everyone knows, Kim and I just got married in September and we had a lot of the same contractors doing our wedding. Lancer Catering does both the Minnesota Zoo and Edinburgh USA’s foodservice for catered events and while they have different on-site wedding planners, the food is basically the same, good but minimal. Jen had the same DJ and photographer as us as well and was the one that recommended both to us.
Anyway, Edinburgh USA is regarded as one of the top public courses in the country. I am not able to speak for that as I don’t golf, but what I can speak for is the absolute beauty of the grounds and the clubhouse. The clubhouse has is nearly castlelike and quite magestic. I don’t know if it was Jen’s decorations inside or what, but the catering hall was beautiful and certainly a wonderful place to have a reception.
